Dutch oven beef stew
2 LBs    flank steak, 1 inch cubes  
1/2 cup    flour  
2 tsp    salt  
1/2 tsp    pepper  
3 tbs    fat, such as bacon grease  
1 cup    water  
1   onion, sliced  
5   potatoes, quartered  
5   carrots, chopped  
1 Put flour, salt, and pepper into a paper sack. Drop meat cubes into sack and shake well, being sure to cover meat well.
2 Heat a large dutch oven. Add fat. When fat is hot, add meat, and brown on all sides.
3 When meat is browned, add water. Top with sliced onion.
4 Cover and simmer for 2 - 2 1/2 hours.
5 About 30 minutes before serving, add potatoes and carrots. You may need to add additional water. Cover and simmer until done.
